I also like Victory Gundam's episodes where the enemy commanders report to their higher-up while lying their asses off (i.e. "We gave the civilians enough time to escape" while on-screen the city is being bombed into the ground) and the one where they're using a mindfuck weapon and the MC flashes back to the most traumatic moments that happened to him throughout the series.
Any recap that's narrated by a character expressing their thoughts and feelings is also good by me.
But the best one I've ever seen was probably the one from Ryuki, where the antagonist resets the timeline and sends the protagonist back to the first episode.

Martian Successor Nadesico, which parodies classic mecha heavily, has as a running gag an in-universe TV show called "Gekiganger 3" that's very obviously a parody of Getter Robo. Every now and then, there'll be a scene where one character or another is watching a bit of a Gekiganger episode.
For the recap episode, they turn the tables and have Nadesico as a fictional show in the Gekiganger universe, where the characters are commenting on the fact that this week's episode is a clip show, then finish off with original Gekiganger scenes, as though it were a Gekiganger III episode all along.
