To be fair that happens with just any kind of media that approaches fantasy not only manga and anime.
In literature happens exactly the same, of course there is stuff if you look enough, but the usual is the LOTR style. Mangaka don't seem to understand subtlety when it comes to certain genres like fantasy. Usually they find the most popular example in the West, i.e. Lord of the Rings, Game of Thrones, etc. and take them to extremes.
So looking at Berserk, it takes the pessimistic world of GOT and turns it into constant edge fights with demons haunting one specifiic guy.
Other times when it comes to fantasy, Mangaka go for the good old generic European fantasy story found in any JRPG or asian MMO. These stories have colourful worlds with races that all look super cute.
Magi and NGNL are guilty of this. Bright colours mixed with worlds that aren't very creative at all, races that are even less creative and history which is straight rip-offs.
Basically Mangaka are hacks and cannot respect the nature of fantasy storytelling, only becoming the 90% of shit that already exist in western fantasy series.
