This was explained in Kizu. Araragi weakened her until she barely exists and has to subsist on his blood. That way neither of them count as a vampire and neither of them have to eat people to survive. A byproduct of this is that Shinobu is too weak to maintain an older body. The indignity of it all is why she sulked through Bake.

I don't think she was so much impressed by him as she was disgusted at herself for dragging some nice young boy into her botched suicide attempt. The rest of Kizu from that point is her trying to make things right and give Araragi his life back.

Not really, it's more of a theme in the series. Shinobu's supernatural perfection and Araragi's human imperfection balanced eachother out, Hanekawa was an unnaturally perfect human, Hitagi became the counterbalance to Shinobu once Araragi decided to take the middle road, etc.
Rather than just liking perfect characters, he seems to like to play around with the contrast between perfect ideals and imperfect reality with his work. It shows up in Medaka Box as well.

Shinobu isn't really perfect in the same way as Hanekawa, and I'd even hesitate to call her perfect at all. Shinobu is strong, smart, kind, and always tries to do the right thing. However, she still decides what the right thing is from her own beliefs instead of following a template, and counts herself in the equation so that she gets what she needs as well. Plus, for all the importance she puts on her own appearance, she still overtly struggles with things like a human would.
Meanwhile, Hanekawa lives and acts as though reading from a script, without considering her own needs and in doing so, gracefully executes the best that society expects from a person without apparent struggle, like a saint.

Shinobu is perfect in an abstract sense. She's a supernatural manifestation of human ideals, she's also a being that's at the top of both the natural and supernatural food chain, she's tremendously powerful and has virtually any power you can imagine, was worshiped as a deity, etc. Her perfection is more described through the nature of her existence rather than her general personality or attributes (since those just come down to personal taste).
There's also the fact that her perfection is intentionally undermined within the story for multiple reasons: First is the fundamental fact that human beings are incapable of conceiving true perfection in the first place, meaning that even the greatest supernatural being/ideal is still going to be flawed, this is why Kissshot still had conflicts and ultimately tried to kill herself, and fell into her situation with Araragi.
Second, Shinobu stops being a full-fledged supernatural being/vampire after being sealed by Araragi, and becomes a pseudo-human. This is what I was referring to with her and him "balancing out" in Kizu, Shinobu gained some human traits and Araragi gained some vampire traits. It's from this point that the idea of "perfection" within Monogatari becomes muddled, because Shinobu is happier with her new situation but her and Araragi have yet to reach a proper resolution. This is one question that Nisio hasn't seemed to have answered yet and honestly, I have no idea how he will be able to.
You pretty much nailed Hanekawa on the head: She acts out the idea of perfection, she doesn't metaphysically embody it like Shinobu does. Hanekawa is ultimately just a human, incapable of truly becoming perfect, and it's because she forces her physical existence to try to become such that her flaws end up manifesting themselves on the supernatural plane. She's a complete inversion of the roles that natural and supernatural are meant to fill.

Even before Shinobu jumped to the top of the supernatural food chain, she had a different kind of perfection: the world's most pure, beautiful soul. After she became a vampire, it eventually faded. Now it seems like her time with Araragi is helping her become a much better person than she was as a godlike vampire and pushing her back towards her original perfection.

In addition, I don't think Shinobu so much gained human traits, as lost her vampire powers and now has to adjust to life without them, which forces her to act more like a human. I guess it's just semantics though.
