If there was something his powers couldn't fathom he wouldn't just explode like he did, by the very definition of his powers he'd just try and fail to create that thing. In the very least if his powers were going to hit their limits before he could overpower Zaraki, then Kubo could have had Zaraki cut him and Gremmy not understand why his powers didn't make him as invulnerable as he'd wanted, then reveal that he couldn't comprehend Zaraki's true strength. Here's the problem /a/, you're all saying

But remember, this is a shonen manga, and even more it's the fight of one of the most beloved and hyped captains, so it's to be expected not only for Kenpachi to show off his new powers a little, but also at most to tie, not to outright lose or get murdered. That makes no sense in the context of the story Kubo has to tell.
The real problem everyone refuses to touch is that given Gremmy's reality bending power and Kenpachi's just slash shit power, none here can come up with an enjoyable and logic way the fight could go. None seems to be giving better ideas to match what Kubo did.
Like Kenpachi is auto dead from the start? Cool? That doesn't solve shit and dissapoints your readers, in fact you're going a bigger asspull there needing to revive kenpachi later or some shit.

Schrift N ideas:
The Number - something about counting down to a condition happening; or something happens if something else happens x number of times. Or, let's say he could grow a 3rd eye if his opponent is reduced to 1 eye, or if he loses an eye he could grow it back as long as his opponent has less than the normal number.
The Neutrality - something akin to Jugo's hypothetical Balance, where he can always shift the tide of battle back to 0 favor for the opponent if the enemy gains an advantage.
Or something about being immune to damage unless he inflicts that damage on the opponent first. So, after taking Shunsui's eye, he'd be immune to everything but attacks to one eye.
The Negative or Negation - he can create the exact opposite of something to cancel it out.
The Nearby - he can always get close to, or behind, the opponent, even if he doesn't know where they are or if they're very far away.
The Novice or The Naivete - his opponent is forced to commit novice level mistakes, like Shunsui getting caught off guard despite his experience. The more experienced the foe, the more effective this is. Perhaps he can even rob battle or tactical prowess this way.
The Name - he can control or subdue things by knowing their name; a gimped or alt version of Hyousube's ability. Also he doesn't inherently know names of things.
The Noose - under the right conditions, his opponents are decapitated, and otherwise feel as if a noose is tightening around their neck.
The Neither - Robert is never where you think he is. Or, he is no longer where he was if you happen to guess correctly.
The Night - powers of darkness, night, or shadows.
The Needless - Robert has no "needs" and thus unlimited resources.
