He actually has an inferiority complex and crippling depression, from the get-go he calls himself an "ugly person" not to mention later on in the series he constantly calls himself trash, stupid, weak and useless. The more cheery and meme-spouting he is, the farther away he is from his actual personality.
While it is mostly for his father to blame, the reason why he is so happy and excited for the new world and why he is so clingy to the people around him was due to the fact its a new life and a fresh start. He can finally make a name for himself rather than live up to his father, not to mention they were the first people who treated him kindly, and a place he can call "home" a place of his own, basically, Subaru still loves them nonetheless. He felt detached thus his reasons for wanting to work so hard in this world and dying for others was to have a place where he could belong. He wanted to have something that was his and his alone that he could work for instead of being in the shadows of someone else. He has a chance. Could have been early in the story but I guess better late than never, right?
Not to mention he craves their approval because he craves anyone's approval. He hates himself and tries to make himself feel better by saving others, it doesn't work and his own sense of worth only grows worse. That's why he boils over eventually. You people seem to underestimate just how much Subaru hates himself.
Not only that but he was marked for death the moment he stepped into the world, so even IF he abandoned people he would have died anyways, maybe in more brutal ways. Considering how many people actually start hunting him down once he gets transported.

Alright Autist, let me break this down for you.
This is not set in a modern day setting. It is not 2016. They are not in a democracy. They are in a monarchy where the throne is currently absent. The entire future of who rules the kingdom, who has power and the right of sovereignty is at stake. Emilia is in line for the throne and people are trying to kill her or use her for their advantage, because that is what you do in a succession struggle in a monarchy.
Subaru mysteriously appears as a rescuer of Emilia. Without speaking to her, he knows that her insignia has been stolen, and his message "do not go to the loot house" is what brought her there in the first place where an attempt is made on her life. He then becomes her rescuer in an event that could very well be staged for him to gain trust.
Emilia brings him back to the mansion. Her purpose is to investigate him and find out what he knows, because it's already something. He is there not as a "guest" but as a suspect. He also has the smell of the witch on him, meaning, the most evil entity in the world is definitely connected to him. And very strongly so. This is the exact smell present at the destruction of their village by the Witch's cult. Ram and Rem then took refuge at the mansion. And he brings the smell in there.
His first death has nothing to do with either Ram or Rem but with a plot aimed at damaging Emilia's prospects for the throne by creating a scandal such as a murder or mysterious death at her place of residence.
This causes Subaru to begin acting extremely suspicious. At the same time, it strengthens the Witch's stench.

He has two causes of death in the second loop. He has been cursed as part of efforts against Emilia (that also have another purpose) and he is already going to die from that curse.
As he is dying, he heads towards Emilia's room, the person Rem/Ram are assigned to protect. He does so heavy with the Witch's scent as he staggers towards Emilia's room vomiting. It turns out that a sect of the Witch Cult also vomits. At this point, he is approaching a potential heir to the throne, in the dark, while looking entirely like and smelling entirely like a witch cult member. So he is killed.
This is a world where people have powers and you have no idea what anyone can do. Elsa can kill people so quickly they do not even see it coming. There are others in the Witch Cult that are even more dangerous. Why take that risk? Why not kill someone who has a very shady past, who has no one to back up his story, who is not politically connected to you, and is extremely suspicious as he heads towards an assassination target. So he is killed and rightfully so. There is just no point to not killing him, since he is either a spy or worse.
In the third loop he acts extremely suspicious. He knows where everything is at the mansion, he is familiar with the schedule and places, he talks about his intention to make a promise with Emilia, and he smells so evil that it's nearly unbearable for anyone who can smell it. He is also investigating areas and acting generally strange the whole time.
Then, he thanks everyone, states that he is leaving, and then he hides on the perimeter of the mansion with a knife, with a perfect view of Emilia's room. So he already lied to them about leaving, he already seems too informed, and he already looks like he is a killer. What would you do if you saw someone outside an assassination target's house, holding a knife, when they told you they would leave? And they have that unique scent.
Obviously, you would want information and to eliminate a threat.

Finally, I will make something else clear to you.
Subaru gaining the trust of Rem/Ram and avoiding death is so that he could stay close to Emilia. This is the goal of the Witch. Subaru IS her agent. She is the one that is resetting him. She is the one that moves the save points when things she wants done get done. And Subaru cannot proceed with his life unless he executes the Witch's will and does what she wants.
So, they actually should kill him. He is unwittingly collaborating with the Witch and there is no way for him to not be her agent. That is what he is compelled to do, and while the things he does appear nice, they are the Witch's goals and she is probably not planning something great.
Beyond killing him, they should actually do something to prevent him from respawning. Like... sealing him away. However, they cannot because he is not able to disclose his power.
So, that he isn't killed means he is still in the world and advancing the Witch's scheme.
It does not matter if another person does not know they are carrying a lethal and contagious disease or a bomb. You do not want them near you.
Why doesn't Subaru resign himself to a comfy life where he loops the same four days hanging with Emilia and meidos before dying painlessly in his sleep and restarting?

Subaru sticks around because it's his best option. He honestly has nowhere else to go, unless you think you can just start a new life relatively easily with no resources or knowledge. Plus, what would he gain then? He's got himself involved with fairly interesting and important people who care about him. What would you do? Go the loner route and just do whatever and never interact with anyone? Get together with an adventuring troupe? Why would anyone hire you?
So because his best option is to stick with those he knows fairly well, he tries his best to relate and help as best he can. That's why he feels so hurt when he dies and why he feels obliged to keep doing it.

Rem is worst girl. Subaru lost his balls at Rem's deathbed conflict. Also his voice actor makes my ears hurt. The tone shift when he pulled Betty's hair was jarring and ruined the impact of the scene. They cut the scene where Emilia tries to cheer Subaru up.
Otherwise it was a decent episode, probably the high point which isn't saying much.

Mansion Timeline 1: If he didn't die he would have been perfectly fine. Everyone would have liked him and he would have integrated perfectly.
Mansion Timeline 2+: He became paranoid and starting literally smelling like a member of a cult that is determined to destroy the world. His first time seeing the killer is Rem so he assumes he has been killed every-time by them.
