For Sayaka, there isn't the security of undoing all the events and making the correct choices until she succeeds. Mami went crazy when she found out about the truth of being a MG. Kyouko was about to turn into a witch during the last timeline. Surely that must tell the viewers that turning into a witch is an inevitability, especially after realizing that there is no hope for magical girls.
