Bad guys always will end up beaten and Fairy Tail would be sitting in guild hall making a mess afterwards. Natsu isn't going to die in the end and That "Scarlet Despair" Witch is Erza's mother.

The anime generally does a pretty good job of sticking to the manga, but the filler arcs are utter shit (with the exception of Fairy Tail Zero).
Watch it for the characters, not the plot. The plot is predictable and everything you've likely heard about ">muh nakama" is true, though Mashima seems to have learned his lesson in the latest arc.
But yes, the fanservice is borderline ecchi at times.
