What's all the fuss about? It was okay. Do people really just love it for the girls?
The OP and ED were something when they aired. Fairly certain the ED was the band's big break.

I like the characters, all of them are likeable and and have some good story arcs. Araragi is also a decent main character for a LN.
The overall plot doesn't seem that good unless you're interested in it, I'll give you that.
The soundtrack is great, it's unique, always fitting and I listen to it even when I'm not watching the show.
I love the artstyle and directing style, but I'm a big Shaft/Shinbou fag, so yeah.
The dialogues are always entertaining, many anime completely fail to do that.
The fanservice isn't deep, but it's often showed in unique ways and the girls are owning their sexuality instead of being afraid of it, which is good.

This. In Bake there is an entire chapter with Araragi and Senjougahara talking in a car, but in spite of that it was really amusing. After finishing the episode I remember thinking that not many anime shows know how to do that.

Pretty much on point.
I've gone back and rewatched random arcs here and there, and SHAFT really knows how to adapt Nisio's excellent storytelling.
The plot is actually really great, but I feel it's lost on most people because they aren't aware of it. Bake seems like a monster-of-the-week kind of thing, but there's a solid, and really subtle, plot that is woven from arc to arc.Still mad that they fucked over Kabuki

Because it holds your attention with interesting and/or funny dialogue, something pretty much all anime fail to do nowadays.
The dialogue of most anime is either infodumping, superfluous or some bullshit speech about "muh ideals".
The animation is good, the directing is good, the characters are likeable and it doesn't take itself too serious.
It also helpts that it never gets tale/boring, every episode you watch you are interested to see what is going to happen or be said.
