So I'm 3 episodes into this and I have to ask: why isn't Leorio the main character? He's by far the most interesting character of the bunch so far. Gon's Gary Stu nature is very irritating and he just feels like a ripoff of Goku, and I'm having trouble feeling the attitude on the blonde kid (his maturity doesn't suit his age imo). Should I keep watching this?

You've watched 3 episodes out of 148, why would you expect to have grasped their personalities yet? Gon is one of the least Gary Stu battle shounen MCs out there. He's very cute and friendly most of the time but he's also morally questionable, hypocritical, selfish, and mentally unbalanced in ways that cause shit to hit the fan eventually. His positivity bites him in the ass when it doesn't work out and he goes off the deep end completely, he actually ends up being somewhat unlikable due to how genuinely flawed he is. He's inferior in strength to just about every relevant villain, mentor and hunter in the series so he loses fights constantly, and his victories are usually minor.
Leorio is a likable character, but he's comic relief and is barely developed at this point. He's only just getting his own arc now (350 chapters in).

It's less about him not having patience and more about the 2011 adaptation being much flatter in the depiction of the characters and the events.
In the manga you see Gon going through a considerable range of emotions and expressions in the first chapter alone: fear, happiness, guilt, enthusiasm, curiosity etc. In the anime he's depicted as your run of the mill overexcited yelling main character.
At the end of the day he still goes through the same story arcs and the same events, but in the manga you can gauge his humanity better than in the anime, where it feels like he just hard switches between different mental states. As such it's harder to trust the anime that the plot and characterization will eventually be good.
