Have you tried adding more steps? Try doing 1 10 10 or 1 10 30. You can also change the steps for lapses, I use 10 10. This has 2 benefits. It helps you remember the words better because you have to recall them more times, and it increases your retention score because you have more cards to get right.

It has one of the definitions of "style" in English. It's certainly not 和製英語, you don't even know what that means. It has to do with the word, not the meaning. 日本で，英語の単語をもとに，英語らしく作った語。 For example "jet coaster".

I think it is theoretically possible to do 1000 new words in a day but your retention will be poor as shit and the following days' reviews would take too long to make that a sustainable pace. I think the fastest pace a human should ever go at is somewhere around 200 words/day and that is only if you have NEET-level free time.

水 for example I learned that this was the kanji for water, but it's also used for other words, and it gets confusing.

I started with Kanji grinding as well. With the early kanji you can somewhat guess which meanings are useful based on what words the kanji often occur in and focus on those.

I tried learning Japanese last year at some point, but screwed up in various ways and ended up giving up after a month or two. This was just me trying to get back to where I left off.
I still have a thousand or so more cards to do before I'm fully caught up, but I think my memory of those will be much weaker so I'm going to take my time with them.
