Why don't doujins go with the same artstyle than the anime/manga they are from?
It's not that hard to copy a style and at the end the rendering is so much better.

The style recreation often doesn't end up perfect and might make the drawings take longer. Sometimes it's obvious that the artist didn't even reference the original character design that closely by mistakes like different shoes.
The artist might also just prefer their own style too. This seems to be especially common from groups that make doujins for multiple series. At least based on the promotional image advertising published doujins they sometimes post on pixiv. In those case, more often than not, they seem to give their "house" style to everything.
