They didn't sink the german ship only damaged it enough to slow it down. The instructor that attacked them is presumed to have scuttled her ship in order hide evidence and frame Harekaze. Mashiro's mother believes that Harakaze wasn't at fault so she tells to Blue Mermaids not to attack it. They need toilet paper because they haven't resupplied since they left and everyone was using it for other things. It's not that difficult.

Pretty much this. One on one, submarines win against destroyers most of the time. ASW is usually done in packs as submarines has too many places to hide and was made to take out the enemy when they least expect it. However, with that being said, the destroyers do carry weapon designed to destroy submarines so the submarine can't just indiscriminately fire at everything. If they use proper planning and tactics, other than incredible luck, there's not much a single destroyer can do to the submarine.

What I don't get, is why there wasn't a contingency plan if what happened on the show, got really ugly. No commanding officer ordered to take charge if captain is captured, the ship not prepared to escape if hostiles show up, crew pretty much just lollygagging around and not at their stations. Not really something good to be doing when in hostile waters.

Why would the submarine do anything that would reveal their position to the enemy other than to deliver the lethal shot? Unlike destroyers, submarines has zero reason to rush, never mind the fact that from the beginning, the submarine had detected the destroyer and can choose whether to engage them or not. They dictate how, when and where the fights begins if they choose to fight. Everything is in the submarine's favor since the start.
The captain and the doctor have to go on away missions. That's the rule.

The record of 1v1 destroyer vs sub fights during WWII is very, very solidly favouring the destroyer. Subs actually sinking the DD was the exception, not the rule.
I'm also very curious as to how US subamrines made IJN destroyers "their little bitches" considering that evne with their horribad ASW doctrine and equipment, IJN destroyers and escorts killed a hell of a lot more USN submarines than the reverse.

Most statistics are usually for tonnage sunk by the submarines and # of submarines sunk. Since they're submarines, it's incredibly hard to confirm kills through observation since they're underwater and all. So, what we have are nations confirming # of subs lost and guesswork on who actually sunk it.
Other than the stuff on wikipedia, I am currently using this site for the numbers, which doesn't give much info on how most of the subs were sunk. There are many other sites but you have to really dig deep into books for deeper analysis and info on ASW stuff.
