Edgy is a very loosely defined term. It generally hinges on the authors intent. For example the violence in Berserk is generally presented as being realistic for the setting. Swords cut people open and under their skin is internal organs. Things enter a grey zone when we add in stylistic violence. I generally think things get edgy when the level of hyper violence inflicted on the characters drastically exceeds either the tone of the series or the amount of violence the character actually deserved. For example you can show a child getting killed to show the horrors of war or to demonstrate the dangers of of playing with matches. Those are real things that do actually happen in the world. If you kill off a child character just for shock value or somehow present that death in a positive light without proper context you can enter edgy territory. Which is generally just poor writing.
I feel like with "edgy" manga it's hard to get attacked to any of the characters. Most of the MC's are just worthless or unlikable. If I even begin to like a side character they just die. I think reading AgK and got tired of seeing characters just be thrown to the wood chipper. Like one character was introduced just to die ten chapters later. Why should anyone care about a character if they aren't going to be there for long?

Storywise - generally shit. 90% of the time the story is just a setting for gory edgefest with powers\skills\deaths based on degenerate fetishes.
