We went straight from Water 7 to Ennies Lobby. There was no down time, Literally minutes after the Strawhats were destroyed by CP9 they got on a train and went after them. By the time they got there, Luffy had two new techniques and could fight on par with the guy who had just schooled the lot of them.
Training arcs aren't required to extrapolate that someone had time to get stronger, but Gear second and Third made no sense at all. I adore One Piece, but that was some FGT levels of convenience.

I do think the idea of the "Final Getsuga Tensho" was kind of an asspull. Because it was constantly hinted over and over that Ichigo might be able to achieve a power similar to Aizen with the Hougyoku. So the idea of him becoming that strong isn't all that strange in and of itself, and since power always tends to have drawbacks in this series, the idea that he'd lose all his power wasn't that strange either.
The problem was the "Getsuga Tensho" part of it all. The idea that he'd ascend was never the issue, but rather the fact that it had anything to do with the Getsuga Tensho, which up until that point was only shown to be a sword laser and really nothing more than that, was an asspull. Also, the form he took. The long black hair and the weird bandages over his upper body. Neither of those things have anything to do with Zangetsu or anything, so I don't understand what the significance of that appearance was supposed to be.

Nobody argues that the concept of restriction and sacrifice wasn't introduced in HxH. The real plot hole is that such and sacrifice require time to be learned, implemented and trained. Nen mastery is not spontaneous. Killua touched on the subject of how long it took him to visualize and summon a chain. Gon is the only person to instantaneously create a restriction/sacrifice and instantaneously gain power up. Many nen experts have died over the course of the story without exchanging their future health in exchange for automatic victory. They clearly would have done so if it had been an available option, yet they didn't, despite having 10 or 20 or 50 more years of Nen experience than Gon. Only Gon became super saiyan with infinite hair. Even Gon's opponents should have been able to do the same, yet didn't.

Everyone loves to harp on about the only asspull in HxH (Nanika), but it gave us one of the best arcs in the series and it's still completely relevant to the DC arc with the calamities and whatnot. And when you think about it, Alluka having such a power makes sense because there had to be a reason he/she didn't appear during the Zoldyck arc despite us knowing there are five sons. I know you're being sarcastic but that's the thing, healing Gon didn't have to be necessary if Togashi didn't want an excuse to introduce Alluka to the story in preparation for the DC arc. I'm not creative and even I can think of multiple obvious alternates to Alluka (losing his nen being the only consequence, having the nen exorcist manage to fix it, Leorio or Bisky's medical related skills), it's not like he was written into a corner. But he's basically foreshadowing a more important plotline about the calamity.
Togashi obviously isn't flawless since he doesn't do long term planning well, the series could benefit from stronger foreshadowing and better worldbuilding instead of him just jumping from arc to arc when he feels like it. That doesn't mean he doesn't come up with good ideas.

GER's ability is not an asspull at all, it thematically serves as a perfect ending.

Diavolo's fate is perfect for him, no control over any of his actions, fated to die over and over again, without ever being freed.

The willingness to give up his life for his own impulsive desires is a key personality trait of Gon that other characters lack, hence he has access to certain nen traits that others lack.
