Yeah it's an issue since a lot of stuff everyone should know at a culinary school is stuff that still needs to be explained to the readers.

Souma is generally useful for this due to his lack of formal training. And for more advanced techniques having someone like Megumi around to explain to works.

But yeah, just about the only thing anyone should be explaining to Erina is stuff like Souma's pleb snacks in this ch.
