Because the whole point was that NERV didn't want anyone else to fight off the angels, because the end goal wasn't actually saving the world from the angels, it was keeping them from prematurely starting their own impact that SEELE wouldn't be in control of until the Evas would be able to start an impact of their own that SEELE/Gendo could use to their own ends. Using non-kabbalistic golem robots to fight off the angels defeats the purpose of the whole thing being a grand apocalyptic dance as the Dead Sea Scrolls foretold.

What the fuck would it have even done? Lumbered awkwardly at one, gotten its ridiculous control rods severed, and then beaten to shit while it's helpless? Literally the ONLY Angel it could have managed to fight without being savaged into pieces would be Arael, and Arael was sitting comfy miles in space. Plus, you know, AT fields. It was a worthless piece of shit only good for draining funds from NERV, so it got fucked like it deserved.

While Jet Alone was contractually obligated to get wreked (It's nuclear guys; Japan's passive-aggressively sore about that.), it also was rather ironically a case of wunderwaffen syndrome.
It was supposed to replace the EVA; and according to the extended material, might have actually managed it... Years late and trillions of dollars short.
The people involved wanted to pretend their little prototype was a few little changes from being operative, when the Jet Alone design was only suitable as an ammo carrier or decoy.
So NERV sabotaged it in the most terrifying way possible for its supporters, and it got canned, saving them their contracts and keeping humanity safe (and instrumentality on track.. Can't exactly go singularity if there's no humanity to condense.).

That actually happens in one of the video game spinoffs. If you can shut down Jet Alone without destroying it (ruining the NERV/SEELE sabotage plan) the military industrial complex secretly rebuilds it with an experimental N2 reactor. Then the Jet Alone guy sends it to help you during the Mass Production Eva battle.
