There are different equally "correct" systems to do so. Incidentally, as far as I'm aware the tendency for the "oo" to be turned into "ho" is not dependent on the system and is a practice commonly verified in names in particular so the comparison to common words is not applicable.
I don't really see the need to complain about the use of "oo" either as it accurately reflects the pronunciation. "ho" being the official romanization gives it an edge but still probably not worth starting an argument over.

The roman alphabet isn't a proper match to the sounds of the Japanese language and you should know that. ふ reads more like a hybrid between "hu" and "fu" than actually like "fu", for instance. Jack would be ジャック because somebody, at some point, established that would be the case. In fact, this is an interesting example you give, because roman alphabet -> kana rules do not exist and the mappings are simply "what is used". Some different people, at some point, also established several different romanization systems, all of which are seen as valid. In fact, the system you are currently using is not the one taught in schools to natives. Why you think only that one single romanization system is correct? "It matches the sounds better" is nothing more than your own view of things. You don't get to decide what's correct when it comes to arbitrarily established systems.
