Sometime abilities are such that you couldn't do anything about them no matter if you hear about them or not..

It's a form of conceit. Thinking an opponent can't do shit about knowing how your power works. And sometimes they genuinely can't.

It is even better when the main character explains how the power of friendship works, which amazes the defeated opponent, and thus causes him to swear allegiance to the one who defeated him to learn this mystical power.

But that's because power of friendship isn't a technique, it's a motivation.
The MC is telling the opponent of his motivation because he hopes that his idealism will win somebody over through a show of efficiency.
It's a cop-out of course. It's not pure idealism if it can be proven to be more effective. Most of the time it makes sense too, and that is especially infuriating.
Why would the villain have discarded his allies for the sake of power at all? Sacrificing them is one thing, but discarding them? That's just evil for the sake of evil. It's cartoon villainy. What are cartoon tropes doing in my serious anime for serious people like myself?

This is the worst trope. It utterly spoils the subsequent action because everyone knows it would be bad writing if the explanation was followed through on without a hitch.

It really depends on the game.
In Baldur's Gate (2), talking is a free action and pauses the action. I don't need to worry about my buffs running out while I'm allowing the villain to have his monologues.
But I just finished Drakensang 2, and talking is not a free action there. It's especially irritating because the final battle is full of pointless bloat. First I have to fight mage1 who summons up dozens and dozens of simulacri. Every time I kill a batch she just summons new ones without a chance for me to attack her directly. Then the main mage enters the battle, but he's got several hundred hitpoints (in a game where fighters don't get more than 70) for no good reason other than to make the fight last longer. It's not so much a tactical challenge as it is a challenge of resource management.
At what points do I need to redo protective spells? When do I drink new potions of strength? Blaaah. And then the fucker wants to get a cut scene for every fancy spell he casts. Fuck you, bitch.
