I watched Kaiji, and I'm just now getting into One Outs. You know how shounen is known as the power of friendship? Seinen should be known as the power of hating your boss. The old man is always the villain. The entire genre is a power play of overcoming your boss.

A demographic is a section of the audience you can try aim your work towards. A Genre is a collection of narrative tropes and convections that help determine the style of writing and plot. A demographic is a broad or specific section of the audience, typically used for specific marketing purposes. They can range from "white 20 year olds" to "30-60 year old black women from the deep south with an interest in ttrpg's and sepsis rules". To use an analogy, a demographic is a list of personality or appearance tags that you can use to find specific kinds of people, much like looking for doujins on sadpanda.

Seinen may not be a genre, seinen has certain defining traits that can help you clump the category together, in the same way that any time you're watching a shonen you can probably think "Man, this sure is a shonen" when certain things pop up.
