I say try reading the visual novel. If it happens to be your thing it's worth it, it's pretty unique. Reading it make the good scenes so much more impactful that is a waste otherwise, and I don't even like visual novels at all.
Now If you can't bare to read but can stand weak visuals, go for the deen anime because Kawai Kenji soundtrack really put things alive. It kind of have an 'old anime charm' to it, I don't know how to describe, but new anime kinda seem more plastic in comparison, I don't know.

I watched the first 5 episodes of Fate Stay/Night and I gotta say, I've no idea what the appeal is.
