I hate it because it was a waste. The Progressive manga confirms that Kawahara is noticeably better at writing SOL than he is at drama or action, and the few bits of SOL throughout SAO were the best parts of the series.
The plot is dumb as rocks but an acceptable mechanism to make vidya-game fantasy SOL happen, except instead of that we got the full force of Kawahara's wish fulfillment retard bullshit for two seasons (and a movie! oh boy!)

because it's popular, because MC is a Gary Stu, because the first and second episode were pretty good, but then it started skipping more and more time such that each episode was basically a one-off which was sort of disappointing given its premise.

This is true. You could use the logic that SAO was the first VR game to justify why so many casuals were involved. Also, it's canon that the beta testers actually had a higher death rate, seeing as beta testers were probably just people picked at random, so more likely to be casuals.
