Eh all the Fate anime are pretty shit. People's hardon for ufotable's stuff just tells me all people actually care about is visuals. It's all flair no real substance. The quality of Type-Moon's stuff always came from the thoughts of the protagonist as that makes up for a bulk of the writing. You lose all of that in the transition and are just stuck with some really bad fight scenes and some flat characters.
Fate/Zero was fucking shit, but that goes for the novel too. It's just a dumb story.

F/SN is supposed to be about mistery but everyone who isn't living under a rock knows Shirou is the red man, Gilgamesh's identity, what Kirei is really up to, how the grail really works... finding out about these things is what keeps you reading in the VN.

It wasn't. The fight between Archer and Lancer could have been a bit longer leading up to Rho Aias, but it's about as good as an anime about Unlimited Blade Works could get.
Heaven's Feel is where Fate/stay night shines brightest. Other than that, the spinoffs are more enjoyable.

This is something you need to read the VN to understand. The advantage of UBW was that Shirou already had the swords traced there to use immediately whereas Gil had to draw his from Gate of Babylon.
Shirou was faster firing his swords than Gil so he was able to beat him. Of course the anime kind of reduced that to lots of leaping around and didn't explain it properly but what can you do?
