Its easy to develop passing interests in things like mecha, guns, airplanes, tanks, cars, and typical power level shit because its easily accessible, and our culture is full of it. Motorcycles aren't nearly as popular as cars, and neither of those as a genre are as popular as other things like general military related stuff.
Bikes are a pretty niche thing, they're more popular in Asian countries than in America. Japan in particular has four of the biggest bike manufacturers in the world. America has one big motorcycle brand, and its complete shit.
There just isn't enough of a cross over between anime fans and bike enthusiasts in the west.

Harley Davidson has always been a manufacturer of trash. They use a 180 degree crank to produce a sound, the sound of a controlled and repetitive misfire. The result is wasted compression, wasted displacement, wasted everything. But none of that actually matters. Harley bikes aren't built to be fast, they aren't built to handle well, they aren't build to do anything actually. They're built to have a certain image. They want to sell an idea of a motorcycle lifestyle to 50 year old guys who will ride a couple weekends a year, buy a branded leather vest, chaps, then store it in the garage and never touch it again.
Major components on Harley bikes are sourced from shitholes in the middle east, and the company has actively been trying to hide it for years. Their American image is nothing but marketing spin. They have always had an issue with throwing valves, leaking oil, pumps burning out, scored cylinder walls, and etc. Why? Because their modus operandi is to be as cheap as humanly possible. They do this because they know the average customer is a two weekend per year rider, they have no reason to maintain any quality standards when their bikes aren't actually being ridden.
Indian as a company is dead, only recently resurrected, and they never built any sport bikes. Victory is nothing but a drop in the bucket who never even remotely competed with the larger manufacturers.
No American motorcycle manufacturer has succeeded in doing anything but slapping together shitheap cruisers that appeal to leather vest worshiping faggots.

Look, the manga is hardly different in terms of plot. I'm not a motorcycle head or anything, but what I loved the most about the manga was its explosiveness and artwork. There's NONE of that whatsoever in the anime. It's all mellowed out and has zero impact.
I love CGDCT as much as the next guy, but Bakuon!! was supposed to be much more than that. And I'm not talking about a deeper sense or whatever, Bakuon!!'s substance was never ever in its plot. I think it ends up being a very niche demographic for Western audiences, since anime fans and motorcyclists don't seem to have a very big overlap, so unless one is a member of both groups, they're probably not going to get much out of this show.
