Most of the depth comes because the writer just threw in whatever shit he wanted without bother to make a consistent narrative, but by adding lots of Grimderp and SUFFERING and making sure the audience never knows what's going on, it looks like there's something there that you're missing.
Then you go crazy looking for it until you project something to find, but its not the same as everyone else, so there's lots of dissent, which makes it appear deeper.

Here are my unpopular opinions:
Eva, Lain, Angel's Egg and Utena are actually deep.
Miyazaki and Anno are great directors.
Madoka and Kill la Kill are very good anime.
One of the primary problems of the Rebuilds is that they have worse visuals than the original.
Kyoani have respectable craft and excel in comparisson to other studios in the department of character animation.
Oshii's best works were in the 80s not 90s.
Legend of the Galactic Heroes has poor visual direction and unsubtle exposition.

This is pretty much an objectively shitty criticism of Evangelion. To begin with, the only visuals that a creator claimed didn't mean anything would be the religious imagery. Implying ALL of the visuals are meaningless because the religious element was disavowed by a creator is absolute fucking nonsense. You clearly didn't pay any attention while watching Evangelion, because there is abundant meaningful symbolism there.

I always considered the whole pointing out of religious imagery just an effect of a christianocentric view on the world. I mean, people never point out the islamic elements in Dune, the norse elements in Tolkien or the babylonian ones in TTGL. They also don't have much to do with the central thematic points of their respective works yet no one gives a damn about that. They're part of a setting and help to convey a certain type of atmosphere. In NGE it also creates an interesting contrast when you have beings that are called angels which turn out to be surreal looking monsters, nonetheless with flesh and bones that can be broken apart.
People just get to confused to actually percieve Eva as a work reflecting on the themes of escapism and problems with human relations. Some will get interested and dig deeper to realize that, some are just lazy and close-minded so take the at face thing that strikes them which is the judeo-christian elements and think that must be what people find deep about the work.
