He was proud that Shirou said that, but also wanted the kid to live his own life, which was why he didn't teach him to be a magus. He was relieved at the end if his life that someone valued the ideal. The problem is, an ideal is just that, an ideal. People aren't machines, compromises are made, but the ideal of wanting to save others is a positive and enriching one to uphold.
Now if we look at the topic of the thread, if Kiritsugu knew about what went on with Sakura, he wouldn't blame Shirou because obviously the kid is a novice who was being trolled by some old arch magus and Kirei, who even Kerry knew was dangerous. Shirou was I'll equipped and ill prepared for the situation. Plus the Kerry that lost his entire family on the premise of some unrealistic wish granting cup would be different from "Mage Killer" Kiritsugu, who was firmly believing that any price was worth that cup. Hard to say how he would react initially, it would depend on when he found out about the situation.
Though it kind of all falls apart because he knows about Angra Mainyu and planned to blow up Mount Enzo anyway, so what he would do in every situation is blow up the grail with the explosives he planned to detonate but died before he could. So the question is a moot point even as bait.

Kirisugu as well wished he could do the same thing at several points in his journey. If you didn't realize this, then you didn't even read Zero.
Kerry even had a moment when he wanted to take Ilya and run away from everything, and never look back. He had a moment when he wanted to save his mother rather than blowing her up as well, he wanted to save Shirley.
Shirou killing Sakura would be like Kerry killing Shirley, it fucks you for the rest of your life and there's no turning back, as you often see her ghost from that point onward.
Kiritsugu during his final moments in Zero was deeply worried about Shirou's abnormality, he didn't want Shirou following this ideal in a sense because he knew he was warped. Yet in his final moments Kiritsugu decided "Well at least he won't be as bad as me, no matter what happens.
MoS would be the ending that has Kerry rolling in his grave and cursing the sky ironically, since his final concern before he died was that exact thing.

I'm sure Kerry would be proud of Shirou in the Unlimited blade works and Heavens feel routes but be dissappointed in him in the Fate route because he gave himself over to Saber's unreachable light. A light Kerry despised because he believed that because of people like her, War,death and strife became something romanticized in the history books. Same goes for Joan of arc, in Kerry's eyes, she's a naive fool that died for nothing and solved nothing.

Good points, but well, the difference between Shirley and Sakura was that Sakura became a magical experiment due to circumstances outside of her control, and Shirley took Kerry's father experimental medicine of her own volition and became a Dead Apostle, which couldn't be reversed, unlike what happened with Sakura.
Of course that situation was bound to go bad sooner or later because his father was planning to use the villagers anyway down the road, so it ends up being a hopeless scenario, which Urobutcher loves. Didn't Nasu, a normally chill guy, go postal because Gen wanted to make Sakura's past completely full edgy?
