Why do they drift instead of taking a normal line around the corners in Initial D? Grip cornering is faster. Am I missing a significant piece of cultural context?

Drifting is fast in, slow out. You lose speed when you exit the corner from a drift. You have to lift off the throttle gently to return grip to the rear tires and straighten out.

When drifting, the tires are spinning freely without them gripping on the ground which basicly means that your tires aren't pushing your car forward. Drifting also wears your tires down a lot faster than normal cornering. Worn tires won't handle well and you'll have trouble handling the car later during the race. No one in serious tarmac racing drifts because they want their tires to last as long as possible. Real racing is all about tires and suspension. WRC and other gravel racing is a different story though.
Fast in, fast out would mean that you're doing the corner at a constant speed which really wont maximize your speed. Slow in, fast out means that you are accelerating during corner. This will shift weight to the rear tires which increase the grip. If you're doing it right, you should be at the edge of your power band when your exiting the corner so that you can floor the throttle for the fastest possible acceleration.

A narrow mountain road is more like a rally course than a wide track where you have more of a play in which line to choose, drifting one corner can also be a setup to get your car in an optimal angle to attack the next corner. Road condition and surface can vary (gravel and leaves slippery -> wider turning radius) and drifting can block your opponent from passing you or force him to take a less than optimal line in order to overtake you.

And they do. They don't drift through every single corner. Just the ones where drifting allows a more optimal line given the types of cars they're driving. Driving is a pretty complex process and there are a lot of factors that determine the best way through a corner, but then you probably don't know the difference between an engine's power curve and a power slide.

From little I know, drifting is almost never faster especially if you have stupid angles like they have in the show. If you get aligned with the next corner then it might make sense but that never happens in the show.
