We live in a world where you can just go and buy a fucking steak. Why would you settle for carnival-tier food if you actually know how to cook?

Hotdogs are awful too, but at least they're easy. Burgs are a hassle, and they taste like shit.

If you mince the meat, you can't cook it rare, you stupid fuck. The risk is lessened if you cook it right after mincing, but you're still leaving bacteria in the middle.

Sure, you can sear and then mince, but then we're talking an insane amount of prep-work for something that's essentially just poor quality junk food. If you're going to all that effort, why not just have a real piece of meat?


The only argument I can actually see for burgs is the "my parents were lazy fucks, so I associate the bland sweet taste of a Big Mac with nostalgia". I feel bad for you if that's the case, but fair enough, I can accept that you'll occasionally eat one for that purpose.

But going out of your way to prepare a burg? It's insanity. It's an extremely low quality food item with no interesting features.

ground meat is just another way of using beef chuck without needing to cook it for hours
the sear + mince step really is not an insane amount of prep work at all, and with those steps, you can have burgers cooked medium rare, or even just rare.

yes, I could do that with steak, sure. But I'm not on a $15 per pound of meat kind of budget, so chuck/ground will do just fine, thank you.

Unless you are in some shady 3rd world market, the majority of ground beef comes from the round and chuck.

You can use those parts in a roast or braise them, but that takes preparation and time. Ground beef is the same meat ground up to be easier to cook and eat.

That's sausage, son. Unless you're living in a shithole burg mince is generally chuck, which is definitely not a bad part.
