Burgs are the most disgusting thing you could ever eat. Shit quality meat with no texture because it's ground up trash, has to be over-cooked because of bacteria, and some mediocre shit thrown in the bun to give it some semblance of flavor like sugary sauces and cheese.
I really don't understand why they're popular. In terms of junk food, there are dozens of far more palatable items on offer.

If you mince the meat, you can't cook it rare, you stupid fuck. The risk is lessened if you cook it right after mincing, but you're still leaving bacteria in the middle.

ground meat is just another way of using beef chuck without needing to cook it for hours
the sear + mince step really is not an insane amount of prep work at all, and with those steps, you can have burgers cooked medium rare, or even just rare.

Unless you are in some shady 3rd world market, the majority of ground beef comes from the round and chuck.
You can use those parts in a roast or braise them, but that takes preparation and time. Ground beef is the same meat ground up to be easier to cook and eat.
