I was recently rewatching K-On! and noticed how lazily they handled some of the playing scenes. They would often just cut to a different shot like the school yard and not animate the Keions playing their instruments. I found that mildly irritating.

I liked those establishing shots, they help attach you to the location. Like, they'll be playing something normally cheerful and then overlay it with shots of the empty clubroom or whatever to build atmosphere. Creates this melancholic association. I get what you mean though, there's almost certainly labour saving motives involved. TO be fair, I can't think of many shows that length which look better.

Considering the length of concert band songs and how little people move when playing their instruments it made sense to cut out large parts of the songs because it'd get boring really easily. If they showed both songs in their entirety in episode 13 then literally half the episode would be dedicated to the concert.

The movie has the SunFes and final performances in their entirety, apparently. I get what you mean but good direction can make "sitting still" pretty entertaining. Rakugo being a stellar recent example.
I've been on /a/ for almost 7 years and I still can't tell if people like K-On seriously or ironically. I had to stop after four episodes, and I loved Sora no Woto so I'm not entirely against cute girls doing cute things.

There's literally nothing wrong with that. It's a show that has playing music as one of its main elements and the competition was the climax of the entire season. To have it cut was just bad. Also, the music and the tension that they were presenting on the characters as they played was just a good enough reason to have them be animated throughout the presentation. You don't need action lines and sword fighting to make a scene interesting.
