Same reason why anyone would enjoy form of media. It entertains. Be it through bouncy tits or some pretentious social commentary, it engages difference audiences in all sorts of ways.

Infinite potential. It costs about as much to animate some boring SoL as it does to animate some ridiculous space adventure with battles every 10 minutes, so basically, within budget you can do more or less whatever you can draw/think up.

On top of that, you don't need to choose between a great looking actor with questionable acting skills, and a great acting actor with shit looks. You can just take the great acting actor and draw a pretty face on them.

In short, you have a lot more freedom within animation. Its the same benefits regular western animation has, it's just that anime is generally more enjoyable for teenagers/young adults, as opposed to just kids.

For me it's the range of genres together with the occasionally unique art style that pops up every other season, as well as the 20 min format, it makes it really easy for me to keep up with a decent number of shows weekly, and also some great composers that it would be unlikely to find some of their work outside of this medium.
