The whole point to begin with was watching him gruesomely tear through everything he wants in an almost hilariously one-sided way, it wasn't until a bit later that focus shifted onto the various factions and their role in the story that it became more than that. And the plot may have been haphazardly thrown together with many random elements for the sake of being flat out crazy, but the story itself was actually pretty well put together. All of the important characters had their own ideals they represented that ultimately clashed in the war in London, and the themes while not particularly deep, were still well-implemented and fit perfectly with the tone of the story. Plus it actually managed to have a decent ending unlike most other manga of it's type. It's hardly the best, but don't undersell it.

He was already a ruthless killer and master vampire hunter as far back as childhood, did you really think he never wanted to be the man who killed the king of the monsters? Especially after it was established what a cocky, prideful little psycho he was, it makes perfect sense that growing old and weak (at least compared to what he once was) hurt his pride so badly that he was willing to become a vampire for that one last shot in the dark, even knowing how unlikely his chances were from the beginning.
That's the whole reason why he let Integra and Seras go as well, he still cared deeply for them but his lifelong desire to fight Alucard was more important to him than his loyalty to Hellsing, it had nothing to do with them at all so he chose to keep them out of the fight. His betrayal may have came out of nowhere, but it's not like it didn't make sense, there's a big difference between those two things.
