I don't think that archetypes themselves are boring, it always depends on how they are executed.
The worst kind of characters are the ones that never really develop as characters. They don't grow, learn or mature.
Take Byuakuya (or whatever) from OP. Has he changed in any shape or form since his introduction? I stopped reading after hueco mundo, but he was still the same douchebag like before. I doubt that has changed now, years later. This is why he is boring.
The only time you can excuse character writing like this is when its done for comedic purposes. There is no reason for Homer Simpson to evolve as a character, just as there is no reason for Gintoki to evolve as a character.

Considering the fact that he was once as bratty as Ichigo, I'd say he's interesting as fuck. Add in the Zanpakuto arc showing Senbonzakura being childish as fuck, his character is oddly well layered. I mean, he keeps a meat bun in his sleeves for Yachiru. He is not as stoic as he likes to present himself as.

Being nobility comes with baggage, and that forces you to fit the mold or break it. Byakuya went for the fit first, then realized that he needed to bend the mold for comfort. It must also be said, his artistic sense is on the same level Rukia's. He is not all right in the head.

A good execution of that type of character was Rukawa from Slam Dunk. He was considered "cool" in-universe, but instead of trying to make the reader think he was cool, the author played up how much of an asshole he was for laughs.

Character development is the area in which anime falls short most of the time. It transcends genre; good character development can make anything interesting since it is the characters through whom the viewer sees the world. Which is a shame, because almost all of them are character driven stories.
I think sports anime/manga have it easier in this regard because it's easier to show character growth. From loner to team player, learning to trust people and so on.
