I've been kinda planning to give Gintama a shot.
I kind of tried already something like a decade ago, only watched the first episode, but since I was watching some half-a-dozen series already, I just never gave it a proper shot.
Is there any guidelines how to tackle this series? I know some anime have such a slow beginning that the old 3-episode-rule does not apply too well. Also are fillers an issue here, and how common?

Gintama has always really been hit or miss for me, and the past couple seasons are really more miss than hit. I think some episodes are brilliant, but most of the time its mediocre+-5. How it dominates the MAL charts (and thus western fans) I can't comprehend.

I think it's really the vocal performances that make or break a lot of it. Reading the manga isn't quite as enjoyable. Animation is pretty dogshit though.

First 2 episodes are filler and bad, most people think it gets good at ep 25. There's not much legit non canon filler considering the length, and it tends to be worth watching since most of the series is episodic comedy anyway.
It's one of those series that get funnier over time due to long running jokes, but it can take a while to get into. If you don't want to invest too much time try reading a few volumes of the manga to figure out if you like the humour.

The reason why it's popular IMO is because the cast in a long running series like this is all likeable and has their moments to shine unlike others in the genre.
Most gag manga and battle manga center around a few characters that bounce off eachother in order to develop, whereas this one has a plethora of characters that all stand out for one quirk or another.
The author even plays around with the joke that some characters may overlap, but by and large, they can be pretty distinguishable.
Serious arcs are usually highly regarded because when compared to other battle manga, you feel more attachment to the characters as you've seen them in gag scenarios so you want to see them survive when the stakes are high.
Add on top of that the top tier VA choices for each character and you have the recipe for a very successful series.
Why would you care about MAL rankings when people will give an 8 or 9 to an anime they absolutely hate?

MAL's fucking garbage; you should realize this very early on OP. If you want to keep track of what anime you've seen just to show off your ratings to strangers you're doing this hobby wrong.
If you want to use it just to keep track of what you've gone through, even after seeing many hundreds of anime, trust me, you will never go "wait, did I already see this" on looking through your archives/backlog and starting something, you will go "ohhh yeah, I saw this already" really fast if you somehow couldn't tell just by the folder name. So basically it's redundant besides for circlejerking and needlessly exposing yourself for people to pick at your more plebby tastes/ratings.
