Type Moon uses the idea of a 'vampire' to do a whole bunch of stuff that really doesn't pertain to the normal definitions. Outside of Arc and Sion, it's much easier to think of them as interesting demons than bloodsuckers. Nero is a herd who eats people, while TATARI is a type of weather that doesn't even have a real form. Sure, it's nice that Type Moon is trying to shake it up, but it just serves to confuse the word.

Personally, i'd love if some of that was expanded in, say, a sequel, but Type Moon seems to have more fun redrawing Saber.
