Honestly there's no bad place to start, but I'd recommend the 1971 series (green jacket) as a starting point and then move onto literally anything else that catches your interest, be it the red jacket series that everyone loves, the new blue jacket series, or any of the movies. Stay away from The Woman Called Fujiko Mine series and Daisuke Jigen's Gravestone movies until you're more familiar with the series though because they're a lot different than the main series stuff

I personally really enjoyed it, and only watched it last year. If anything about is has aged badly, it's the intro and music, but the series itself is pretty cool. And if you end up not liking it, then you could always check out some newer Lupin stuff.

Gundam is not bad animation by 70s standards at all, if you couldn't handle that you won't handle Lupin. loss for you though cuz lots of 70s stuff is good even if it's very cheap.
I recommend the manga though, it's everything good about the Lupin anime stuff minus all the bad + more violence and sex + fast pacing and the art gets fantastic as it goes along
