And, quite obviously, Espada 1-6 were very prominent characters with their own quirks/desires/histories. The only backstories we got from the Quincies were Yhwach, to some extent, and Bazz-B/Haschwalth. All the others you listed basically boiled down to "they showed X personality in their fights"
They were interesting, particularly in relation to the other Sternritter that got destroyed with barely a panel to show their death. But they still weren't on par with the Espada. And it's because Kubo rushed them. Some of them have potential to be great characters but the entirety of the final arc has somehow dragged on forever and been really rushed in other ways. There should have been less Sternritter and make them group fights to compensate.

Zaraki uses a one-handed style. He fights with one hand, his muscles are built for one hand, his movements and literally everything works with one hand. A two-handed downward slash is not literally ten times stronger than a one-handed slash coming from a forward-slanted one-handed slash. Remember, Nnoitra's 'armor' basically made every one of Zaraki's just glance off after Resurrection. I could see twohanded breaking through his armor and doing damage, but that's different from cleaving clean through, every inch down would need just as much force as the first inch and maybe more (dunno if hollow insides were also that hard).

The difference between Kubo and everyone else is that Kubo plugs his characters into color pages and wears different kinds of fashion themes, which almost no other artist does. They either stick to a consistent fashion trend in the series itself, like delinquent manga, go nuts and crazy like Oda, Oh Great!, etc with shit that's practically cosplay, or works like Mashima where they have a set foundation on what they are allowed to use as clothes, which in FT's case is cute and sexy nothing else.
Kubo is the only guy in /a/'s knowledge of manga that just randomly picks a seasonal fashion magazine, takes a look at it, and mix and matches them a bit before drawing it. Girls do the same fucking shit every day in their room.

The thing that bothers me is there was very little surrounding damage from Kenpachi vs Nnoitra but quite a bit from Ichigo vs Grimmjow. This naturally leads to the assumption that Grimmjow has more oomph behind his hits.
And this is pure speculation but Nel completely fucked up Nnoitra in a short amount of time. And Nnoitra was looking properly fucked after a cero from her. Now when Grimmjow briefly fought Ulquiorra, he drove him back and blocked a cero without sustaining much damage.
I think they're probably equal in power. Where Grimmjow is more oriented for speed and Nnoitra for power.
