You become used to looking at something so you don't notice mistakes. Plus often times people have a natural tilt to the left or right, so everything becomes slanted in that direction without you realizing it.
Flipping it makes the image look completely different so you'll re notice obvious proportional errors and the tilt becomes very obvious.
I'd say the biggest issue is tilt, but the reassessment does seem to occur as well.
