Jobbing is originally a pro wrestling term for a wrestler losing in order to put up the winner. So yes, you could say the wrestler is losing on purpose. Since pro-wrestling is fake and scripted, this is a moot point. The CHARACTER the wrestler plays, isn't losing on purpose. So it's perfectly fine to apply the term to other scripted stories.

Grimmjow's a hollow. He has a type advantage against Quincy. Plus, he'd already used Resurrection. Plus, Askin's reiatsu level has never been stated to be that far out of the ordinary.
Plus, Grimmjow's reiatsu has been previously stated to be at the same level as that of a captain, and the captains seem to be able to hurt the quincy just fine, for the most part. Plus,
it's not as if Askin was focused on defense when he got stabbed, and according to Quilge they can only focus on either offense or defense, not both at the same time.
Now, correct me if I'm wrong, but it doesn't seem all that strange for Grimmjow to stab straight through the fucker.

You're talking out of your ass. Yoruichi's speed wrecked the guy at the start of their fight and again when she used her lightning-cat mode. The only time he "matched" her was after she'd already been hit with a gift-ball attack and was in a weakened state. He's not all that fast.
And Quincy manipulate Reishi, not Reiatsu. Yes, they can sense enemies at a distance, but so can every other spiritually aware being.
Askin was never noted to be fast. That Royal Guard got him not once, but twice, without him reacting.

I don't know what kind of evidence you're looking for. Grimmjow's a fast character. Nothing of the sorts has ever been said of Askin. He entered in Resurrection.
Also -- and this is my personal speculation and nothing more -- I think the Arrancar were just meant to be the physical-type enemies whilst the Quincy are the special-attack-type, so there's that, too.
Quincy's are mentioned to have extraordinary control over Reishi. Arrancar are mentioned to have extreme raw power. Quincy don't overwhelm their opponents with strength, but rather with ability.
Arrancars generally overwhelmed their opponents by just being faster and stronger than them, save for Barragan. Resurrection was shown to improve the physical capabilities of Arrancar, whilst the
Quincy vollstandig only really affects their abilities.
Just a theory, though.
