Read the manga. The morals, pacing, art, atmosphere, etc. are all but lost in the anime.
The ethical quandaries were actually the most important part of the manga by far, but it seems like the show's writers didn't think so. It was interesting in that it actually predated the scientific push toward global warming awareness by a number of years. It also provided us with answers we actually ask ourselves on a day to day basis, rather than focusing sole on impersonally grandiose concepts or leaving thing entirely open to interpretation (although the series was by-and-large morally grey). It actually won over all of my relevant worldviews when I read it as a kid, all of which have managed to stick it out to this very day.
An absolute must-read, along with the author's later work Historie.

If you've read the manga then you shouldn't bother with the anime. There's nothing in particular they did good. In fact there were many things Madhouse did wrong starting with making Shinichi a beta 2/10 male faggot worse than peter parker. Then they modernized the setting to appeal to modern fans except it backfired and angered the fans so badly most of them didn't even bother to buy the BD/DVDs.

And since the series was morally grey, I think with the cannibal it wasn't "they are also bad", but rather "they also eat people/are predatory (which probably ties into the Japanese concept of Sakki, or killing intent)", so bad boys need not apply. This is especially trues since the series makes clear divisions between the mentalities of the "Assholes" and the menially eldritch (Parasytes) and devoid (Shinichi).
