What happened with Hokuto no Ken is that the dub actors found it way too violent. So they refused to dub it unless they could do whatever they like, hence hokuto de cuisine or nanto de vison.
It was AB Production's fault in the first place. At this time, they were literally buying "batchs" of anime without checking the content, so they ended with stuff like Hokuto no Ken being broadcasted in programs mainly watched by kids around 10 years old or younger, which made family association angry, as you can guess.

Italian dub of Kenshiro is the worst thing ever, but it's so stupid that it's fun, I watched the whole series in the Italian dub for fun with a friend (I already had watched the japanese dub) ,the French dub seems dumb as well.
