Fullmetal alchemist brotherhood. I had seen anime before this but none of them grabbed me and made me want to watch more like this did.
For me, it was Trigun. Specifically, the run they showed the first time on adult swim 12 years ago. Man, I didn't know what I was watching, all I knew was seeing this cool man shooting a sweet .45 caliber pistol against a varying array of madmen, weirdos, and the occasional good looking villain was enough to leave me looking for more. That, and it helped that this was the only anime my little brother liked.

I think the first anime I really watched was pokemon. I then started watching things like dragon ball and other anime on Toonami so I guess my interest in anime started there. I remember one night I watched the first episode of FMA and the part where Ed loses his leg and they see the product of their failed transmutation really scared me. I wouldn't watch FMA again for probably a few years. My friend introduced me to manga around 6th grade with Buso Renkin and Spiral: The Bonds of Reasoning so that's where my interest in manga began.

Until one day some guy posted a gif of the LS opening dance and somehow it transfixed me, watched it loop for god knows how long and went to go seek it out.

But just last year after summer I remembered that chink show Avatar I used to watch as a kid and decided to actually watch it, watched all ~60 episodes in like 2 days and actually enjoyed it so I decided to give anime a try since I was bored as fuck.
The first anime I watched was Tokyo Ghoul dubbed no fucking idea why but whenever I thought of anime this always came to my head, I actually enjoyed it although the monotonous voice acting got to me and I decided to watch my 2nd anime which was Shokugeki no Souma which i really fucking enjoyed, since then I've watched a shit ton of anime and wish I never started because I cant find anything good anymore and don't want to watch the little girl shit like madoka. I seriously cant understand how anyone could watch that steaming pile of shit it actually infuriates me.

While it wasn't my first, SAO was what got me into anime as a hobby.
It's a toss up among Yaiba, Ranma and Dragonball (not Z).
Before those I was a fan of X-men, Power Rangers, Voltron and Biker Mice from Mars so I was inevitably going to shift into liking anime anyway.
One Piece is what really hooked me.
It has a weird mix of comedy and drama. You'd feel really pumped at times, but then you receive a figurative kick in the balls.

Naruto. One of my friends showed it to me back in 2002 when it first started airing, and I had never seen anything like it.
I used to watch anime back a long time ago but it was mostly battle shounen shit like Bleach, Inuyasha and DBZ.Then I had a period lasting from the end of middle school to the end of high school where I thought anime was fuckin' STUPID and tried to get away from it as much as possible.
And then this little cutie finally brought me back into it after my opinion on the medium mellowed out a bit.
As a very young kid I watched Dragin Ball Z but I didn't really "get" it. I just watched for the action and yelling, even though I had no idea what they were yelling about.
Death Note got me into anime in general and Toaru Majutsu no Index (and it's spin offs) got me into keeping up with anime source material
Probably Astro Boy, which I think I even watched in black and white back then over 30 years ago.
