I think what >>137729196 means with projected sales are the sales estimates based upon the stalker points and ranking formula. Which was around 10k or so by the last estimate. Studios themselves don't make any estimates. They just hope it sells well enough that they'll get some good money out of it, or that the production committee is more or less satisfied with the results and recommends them to other companies who want to hire animation studios to make an anime for advertising.
And indeed, volume 1 of One Punch Man sold around 12k discs, with volume 2 selling around 9,5k discs.

Nobody expected Overlord's source material to get a mega boost or it's anime averaging above 10k sales. The same goes to Mahouka and compared to those two OPM didn't do "better than expected". My point is that they aren't in immediate danger, or they presumably wouldn't be deep in work on all these different projects, since immediate bankruptcy would leave those all hanging. And the fact that the owners of Bahamut and Garo, which are basically the hottest IPs for MAPPA's anime (not counting Ushio to Tora, since its age is long over) have commissioned not only sequels, but a spin-off and movie respectively should make it obvious that these anime are performing well.
