The show has tons of problems, especially the montages with pop songs gliding over it. I can't stand those moments either.

But, I still keep watching it. I love watching plebs barely succeeding or having issues forever like:

Outnumbering a lone sucker 6:1 and still struggling to bring him down.
Resorting to stealth kills to make up for your general suckiness.
Ill preparedness for dealing with incapacitated healer.
Losing their shit when party leader is out.
Party leader was vanguard, healer, and shot caller and no one could step up.
Having a new member replace your healer but there's no team cohesion.

I love plebs.

This. It's probably the type of show where the big reveals are at the very end. Maybe the LNs explain how they got to the world with the red moon by now, not sure, only found 2 volumes translated from the 7 out in nippon. It's more like anime survivor, the characters are pretty idiotic and the only semi-competent one dies first.

grimgar, they are all incompetent emotionally and skill wise. Every day is a fight to stay alive, not to go home and enjoy your peaceful life in backwater Australia.
Another thing which I thought grimgar did well was character death.

I initially liked Grimgar's refreshing take on that isekai fantasy but we're halfway into the season and now it's starting to become a chore to watch. The pacing is horrid, the lack of a distinct goal makes me uninvested, and none of the characters are engaging enough to fill in that gap.

I'll still watch it though because I still love the 'scrubby fuckwits scarping by' gimmick.

Well it's nice to know what made her angsty, but that's only going to make me slightly sympathetic to her being a bit rough around the edges

But she is also getting better, little by little too

She's still in a very gray area for me, but I always hate the "they were so happy, cheerful and innocent before, until x happened, and now they are emotionless machines" bs that I always heard.

There's some mmo influence but that doesn't mean they are trapped in an mmo.

Guilds and skills, while not exclusive to mmos, could be mmo influence. The fact that there's a party and classes is mmo just as much as it is traditional RPGs influence.

Everything else is generic fantasy world with permanent death even, and I don't see how it could be considered a game just based on the existence of guilds or skills.

It matters because it could be an important plot point in the future.

Being trapped in a game is different to being transported to a fantasy world were people die for real for example.

So far I don't see enough evidence to consider it a game.

I haven't read the light novels but the anime is actually good. My opinion may not matter much since I don't watch a whole lot of anime but it's one of the few series I've seen that makes me want more after the episode finishes.
