In the late 2000's you'd think they could do absolutely no wrong the way people went on about them. They still kind of do, just not really in the same over the top glowingly positive way.
Nah, only masterpieces crafted with care.
Their only objectively bad shows are Phantom World and Munto.
2010 - 2012 was their golden age. K-On!!, K-On movie, Nichijou and Hyouka are their greatest achievements. Tamako Love Story is up there and Disappearance was fairly good.
I want to watch Kyo shows but their shows never end/never are a complete adaptation.
I'm just not really sure where to start.

Depends on what you like, honestly. I personally care a thousand times more for characters than for plot. A story could have a very intricate and well written story or the world being in danger or whatever, but if I don't care a bit for any character in one episode, I'm just going to find myself unable to give a shit about the show. It's already happened with Kekkai Sensen and Dimension W for me, both of them were praised by a lot of people, but when I watched them I found them really boring and couldn't get past half an episode of Kekkai Sensen and one and a half of Dimension W. But in KyoAni shows I usually find myself interested in the characters so I find them easy to watch, and I also like how KyoAni puts a lot of attention into how characters think and act, so I'm way more interested in that.

If I'm not invested in the characters it's bad to me, even something like Kyoukai no Kanata had a meh plot but the characters were interesting and entertaining enough.
Also Phantom World failed in the character aspect, don't know what happened there.

I don't care about how faithfully adapted the source was. Almost every scene in the movie is just a little bit longer than it really needs to be and there's plenty of random fluff that just doesn't fit the tone of the story.

Honestly, most of the movie was Tamako's "OMG INNER CONFLICT", for the final payoff of running for the train/love cliche.

It's obviously a thing in the show, yes, but that doesn't mean it makes sense. There's no reason at all for him to think that the changing of worlds would result in Asahina no longer having a mole. It also matches poorly with the rather desperate and serious nature of the scene.
