Long story short, Moka's outer personality was Moka's mother all along. Moka's inner personality was the only real Moka. So Tsukune basically fell in love with Moka's mom first, then fell in love with the real Moka when Moka's mom decided to share.
The rest basically get written off without much more than a by your leave, though there's very, very vague hints towards a ship of Yukari and Fang Fang towards the end.
Moka and Tsukune become True Vampires, everyone else can go fuck themselves, and you hate yourself for having followed this dog's breakfast until the end.
Go read BlackDragon6's Big Human on Campus. It's unfinished, a Ranma 1/2 crossover, and it's still a way better representation of the series' potential than the Manga Season 2 was.

One of the reasons I both loved and hated the series was that all the girls were immensely likable.
In any other series, any one of them would have had a strong chance at being called "best girl" just for the things they do for their friends and their basic personalities. Even pandering outliers like Yukari or Ruby.
Most harems have one or two girls you think are legitimate, while the rest are annoying distractions from an otherwise passable romance.
In this, every potential romance would have been a good, endearing one. It's very easy to see how any of the other girls could have been the leads, if Moka hadn't been first girl.
It means the author knew how to write a very good romance story.

Outer Moka was just a copy of Akasha's personality that they shoved into Moka, not actually Akasha. Outer Moka is still inside of Moka after all that shit goes down, she just can't show herself anymore. Moka's hair gets a pink tinge at the end because the Outer and Inner personalities began to merge together. In the end she'll turn out to be a mix of the two; not completely ditz and helpless like Outer, but also not completely hardass like Inner.
