I want to get into Dragonball too. Original seems pretty obvious (watch the anime, skip to the manga when the production values get horrible, skip back when there's a well-directed episodes etc) but with Z I have NO IDEA what to do
-Kai improved the pacing in the canon stuff hugely
-BUT THEY REMOVED THE FILLER ARCS THAT EVERYONE SAYS ARE FUN

Kai is like 95% cut up film from Z, but with better color definition than any previous release. It looks great but also has a bit of noise reduction to it that holds it back slightly. However, there's a string of episodes during the Captain Ginyu battle and early Freeza battle that were shot on 35mm and look absolutely gorgeous -- pic related.
The other 5% is digitally redrawn stuff for whatever reason -- either the film was too damaged or they had to re-do flashy stuff because it was TOO flashy. The digitally redrawn stuff looks super jarring and out of place.
It also depends what you compare it to. Compared to the Dragon Box, it's about tied in my opinion -- it's in 1080p, but also suffers from the noise reduction I mentioned earlier. Compared to the pisspoor American DVDs/BDs? Not even close, Kai blows those away.

That said, I can't really recommend Kai to someone new to the franchise. It's got a couple of quirks besides visual ups and downs that really make me not totally on-board
The non-visual downsides of Kai are
-totally skips pre-Raditz
-the Japanese performances are hit-or-miss the second time around
-the editing gets a bit lazy/choppy in the Artificial Humans/Cell arc
-Majin Boo arc was done after the fact, with even lazier editing (and Toei's film transfer looks like ass)
The best thing for DB fans that Kai brought to the table was that Funi got their shit together and made a competent dub. Otherwise I wouldn't tell anyone to bother with Kai at all.
Z, for all its flaws, is a much more consistent and entertaining anime. Kai is more of a curiosity.read the manga

The one that is cropped is the Funimation orange-box "Remastered" sets, which unfortunately is what EVERY streaming version and -nearly- every full DBZ torrent is based on. The "season set" BDs are cropped as well.
Not only are Funi's DVDs/BDs cropped, the saturation & contrast are blown the fuck out in an effort to make the show look "modern" and it ends up looking like ass.

Z is fucking terrible with its pacing and filler, but if you made it through the first anime you probably would be fine with it. Kai has much much better English voice acting and script. When Funimation did Z they had no money or experience, they are much better now. Kai also takes out a lot of the shit that Z added to the story, which is a big plus for me. Only watch Z if you really like filler and radical music.
If you want something actually good you could always read the manga.
