Sakura's written fine. I say this as a Kohaku fan myself. It's again one of those situations where someone tries to criticize writing where they just have different tastes of characters.
Sakura was more than her suffering, and it's odd no one can come up with any actual reasoning why they say this. Sure she had a terrible childhood, but she was trying to find some semblance of enjoyment in life. It's just that, at the same time, when we got her perspective on things, of course it's gonna be somber and bleak at times, it would be in relatively that a living science experiment wouldn't have negative thoughts. It just tends to get ignored that there is also a part of her that wants to go further and not lose against the fatalistic realist she has.
What happens is that the analysis of her character only took the worst of the worst of one of the most terrible two weeks of her life and claims that is all to her.
One of the best scenes was Distant Twilight on day 11 of HF. That was one of the best parts that showed all sides to Sakura, why she loved Shirou and admired him, what she thought of her life and magecraft, why she loved Rin but always felt uncomfortable being around her, and more. There was a lot to digest there.

It's fair enough if you don't enjoy it, but she does rather brave shit for someone so up the creek she would be halfway to the nearest ocean. Nasu even talks about in the UBW TV Q&A how if she had been aware of Shinji's activities with the Bloodfort, she would bring him to heel and stop it.
