I want to start watching Gundam, but there's way too many fucking series for me to watch all of them.
Could you guys help me compile a list of the best/most necessary to see Gundam series?

Watch either the original series or the movie trilogy.(I suggest the movies)
Most of the time it's a genuinely enjoyable story, and during the dumb/melodramatic moments it's comedy gold so it's a win/win.
Plus you will gain a deeper understanding of some of Anime's most persitent cliches and staples.

well, just go with SEED (disregard SEED Destiny), Gundam 00 (disregard the fucking movie), and probably Unicorn.

Gundam fucking sucks, there are good shows here and there but most of it requires some prior viewings and honestly it's not worth it. If you really want to watch something check out G Gundam and Gundam 00 S1, don't bother with S2. My personal favorite is Gundam Stargazer but you need to watch dreadful Gundam Seed and Seed Destiny.
Watch wing only because its what most anons started with when it aired on toonami.
