I kinda want a manga where the main character accepts their change rather quickly and is actively trying to adapt, but finds that it isn't as easy as it might seem.
It'd be nice if they had a hard time fitting and didn't just go "BUT I'M A GUY" every single fucking time.

You mean characters that want to change sex and live like girls? In A World Without Boundaries the MC's cousin is happy to be a girl. And I guess that the MC of Kashimashi sort of goes with the flow, though she had been pretty feminine to begin with so you can hardly tell that she had switched sex. The MC of Mao Marimo also seems to go along with it.
As for trying to adapt but not always succeeding, Mai does initially wish to become a boy again but she does consciously try to pass for a normal girl as she is concealing her identity from everyone around her. As a result she tries to imitate both the speech and behavior of girls. Her circumstances actually resemble those of traps trying to pass for girls as in Otoboku for example.

Most permanent transformations are against the protagonist's will. As a result the characters try to cling to their previous identity and are resistant to the idea that they should self-identify as girls. By the way, this is taken to a ridiculous extreme in Kakumen no Hi, where the MC's parents literally guilt-trip him into agreeing to have a sex-change operation so that he can still pull the "I'm really a guy" afterward.
The only series I can think of where a character chooses and wants to be a girl are A World Without Boundaries and Strange Mansion.

In addition, Ai Mai Mist was surprisingly decent. Yumekoi Tensei was pretty good. Sekai wo Seifuku Suru Tame no 3tsu no Houhou was fairly good too.
