There's nothing special about this. Several years ago there used to be 2 or 3 shows every season about cats and how cute they were. That stoped eventually.
Even Moe-centered shows, which seemed would go on forever, have stoped. The last ones I remember were specifically in this format was Acchi Kocchi and A-Channel. Moe isn't gone, but as the central theme of a show, it hasn't happened much, if at all, since.
We're currently undergoing a boom in Magical Academy and Fantasy World Reincarnation series. It'll go away eventually.
One fad I wish doesn't go away are shorts anime. I've had more than I can handle of Teekyuu being rehashed for literally years at this point, but every season there's at least one good short anime series.

Usually, I try not to bash an entire genre, especially if it involves anime. But I honestly cannot see the appeal of Harems. Yes, I know cute girls, but they're cute girls in almost every genre. And if you want to look at mature content, well, there's an entire industry that caters to that desire, where people don't have to watch Harems for.
I can understand people who like SoL, Romance, and even Moe, but why Harems? The MC is usually an insufferable cardboard cut out, with no interesting personality traits, skills, talent or even character design, yet the audience is expected to believe that most, if not all women, within his reach are attracted to him? Why? Because he's nice? So these women have never met a guy who was polite to them in their entire lives until the MC showed up?
And the Harem girls are barely better than the MC. Many times, they're just archetypes. There's the elite wealthy gal, the athletic tomboy, the shy intellectual type, the nice next-girl childhood friend etc.. I just don't see how people can watch the same thing over and over again. Don't they get sick of the routine?

After watching some 5 years of anime I just can't watch most harems anymore. Every time I try to watch one I just close it after 10 minutes because I can't stand it. There was a time where I did enjoy them but my enjoyment dwindled after each series. So to answer your question, OP, they probably haven't watched a ton of them yet. And if they have, well I have to admire their dedication to watching the same thing with minor differences over and over again.

I feel this way about most anime though including harem. I've dropped or temporarily stopped watching more anime then I have finished. Manga I feel more compelled to finish if I reach a certain point but I have no qualms dropping a show I've been following mid season. I don't normally read harem manga though.
