It's funny the mangaka-sensei dude was rambling about the integrity of his psychological self-exploration when the show is pure fan service schlock. It's also scary to imagine guys like that may actually have that level of power over anime studios. Every series could end up like George Lucas with the Star Wars prequels where nobody could stop him.

I dunno about that. The issue is that ultimately the author calls the shots, but the editor acts as the intermediary between author and anime studio. When the intermediary is useless, you get problems. And it's not always (rarely? dunno) possible or practical to just go to the publisher and say "we don't like going through this guy, give us someone else to deal with". You have to do everything through the right channels, deal with the person in the position. Even if that person is a useless fuck.
"We won't deal with this guy" is more likely to get you the response "okay then, we won't do business with you" than it is "okay, here's someone different". It sucks, but that's the reality.

No. It's a project that the publisher also invested in. The publisher would like to know ASAP if there are potential disasters. Of course normally they would prefer the reports come from their own editor, but if the studio think the editor is becoming a huge problem it's also their duty to let the publisher know. And publisher would really want to carefully examine the situation, unlike in the anime the chief editor just basically told them "tough".

There's a couple of things to keep in mind. First is that the publisher was a bit dubious about the idea of letting MusAni adapt 3rd Aerial Girls Squad to begin with, given the studio's less than stellar past (ie Jiggly Jiggly Heaven). Second, especially given that, the editor-in-chief would tend to believe his own employee's account of events than someone from another company. It was only once the author told the editor-in-chief how useless the editor was being that he took any notice.
That the publisher is invested in the project isn't absolutely compelling above all other factors. Even if the anime were to fail, the publisher probably wouldn't come out at a loss on it. It succeeding would be more profitable and not having that would be worse than having that, but their primary concern is selling books, not scrutinising every detail of adaptations of all of their properties.

Does the way it played out still stretch plausibility at least a bit? Sure. But it is still plausible.

Even so, that chart is not to be taken seriously. It's way too exaggerated, on both ends.
Animators do get shitty pays but not that low. That's probably for someone that's still in trial period. And the salary for "A-list" voice actors is way too high. There is probably only one seiyuu with that kind of income, namely Mizuki Nana, and she can make that much money because she's also a pop singer.
